In a bowl we put the flour, yeast, fennel seeds, salt, water and honey. Knead until everything is well united. Add the quark cheese and knead again until you get a smooth and uniform dough.
We form a ball, place it in a large bowl greased with oil and we cover it with transparent paper or with a damp cloth. Let it rest for an hour in a warm place.
We divide the dough into 12 portions to which we will shape a ball. Sprinkle with flour the countertop and with the help of a roller we spread the balls until they are as thin as possible. We puncture the entire surface with a barbed roller or with a fork.
We heat a large thick bottom pan, put the dough and we roast it about two minutes on each side taking care that it burns, without roasting, it must be soft and manageable to be able to roll up.
