I have seen the recipe manresanita chicken “dick to manresaneta“On the website of the Catalan Institute of Cooking Foundation, and when I read it and saw that it had all the ingredients (more or less), in the pantry I decided to try it, with some slight change with respect to the presentation , since the original recipe is made with the whole field chicken and chopped and, I have cooked it only with breasts, and I have given up a spoonful of flour that had to be added during cooking, but basically it is the same.
The first thing that has caught my attention of this chicken has been the name, manresanite “manresaneta“It seems that it refers to a place but I have doubts if it is Manresa or La Manresana, or maybe there is a place with that name or maybe it is dedicated to a young lady from Manresa, who knows? But what I know is that the original version of this dish is usually made for the main party.
4 sliced chicken breasts, 100 grams of diced ham, 100 grams of boneless olives, 1 onion, 2 peeled tomatoes, parsley, oil, salt, pepper, a handful of roasted almonds and hazelnuts, 1 garlic, 1/2 glass of stale wine, olive oil.
How Manresanite Chicken is Made
In a pot with a drizzle of oil we put the chopped and seasoned breasts and olives. Let go brown and remove from heat.
In a separate pot we fry the chopped ham, onion, tomato and parsley. When this sauce is added to the chicken, and let it simmer.
We make a mash with garlic, hazelnuts and almonds, we deslense it with the wine and add it to the chicken a little before finishing cooking.
