Pasta gratin recipe

We come back with a recipe from Jamie Oliver, it's about the pangrattato pasta recipe. A very original way to take advantage of homemade hard bread since, as he says, instead of adding a sauce or cream to the pasta they are solid elements that give it a novel texture.

But we can also aromatize the pasta with herbs that can give it a pretty good touch. Although if I am sincere I have preferred not to put anything to better take advantage of the intensity of anchovies.

Ingredients for 4 people

  • 2 cloves of garlic, 1 chilli pepper, 5 tablespoons of breadcrumbs (chubby), 10 anchovies, 1 lemon and 400 g of pasta (in my case penne).

Preparation of pasta with pangrattato

We boil water with salt for pasta. When it has 5 minutes to cook, we put in a pan a little oil of the anchovies and heat it.

Add the breadcrumbs, garlic, anchovies and chillies to the oil. And if you want some aromatic herb, it's time. We stir well a couple of minutes.

Add the pasta once cast. Stir well and serve hot.

Tasting

Before removing from heat, pour the lemon juice and stir well. It gives a great touch. Of course, control the spicy chilli in the pasta pangrattato because it can be a little incendiary with these heats we are having right now.
