Ingredients for 2 people

  • 2 endive leaves, 1 apple, 1 avocado, 1 natural yogurt, coriander leaves, a tablespoon of pomegranate grains, a teaspoon of sugar and lime juice

How to make endives stuffed with apple and avocado

We select the largest and crunchy leaves of the endive since they will be the ones that we will use as a container to form the barquetas or stuffed endives. We wash them well and let them drain on a paper towel. While we proceed to peel and chop the other ingredients.

As both the apple and the avocado oxidize very quickly and lose their beautiful color, it is recommended that as you cut the squares, you sprinkle them with lemon or lime juice so that they do not change their tone or darken. On the other hand, we beat the yogurt to make it very liquid and add a few drops of lemon juice and 1 teaspoon of sugar. We cut a grenade.

Fill the endive boat with the pieces of apple and avocado, we incorporate some pomegranate granites and sprinkle with some chopped coriander leaves and distribute two tablespoons of the yogurt sauce in each endive, so that the content is creamy and easier to eat.
