Mallorcan brown bread. Recipe with Thermomix

If there is something I especially like for breakfast, it is a good slice of bread dressed with strong olive oil. This Mallorcan brown bread recipe with Thermomix It is an excellent way to enjoy in the morning, or on any other occasion.

You can also make this recipe even if you don't have a Thermomix. The kneading will be at hand and it may take a few minutes longer, but the raised ones, fundamental to get a good crumb, will be the same. You will love the result.

Ingredients for 6 portions

  • 350 g of water, 15 g of fresh pressed yeast, 400 g of whole wheat flour and 200 g of strength flour.

How to make Mallorcan brown bread

We put in the glass of the Thermomix the water and the yeast and heat 2 min / 37º / vel 2. Add the flours and mix 20 sec / vel 6. Next, knead 3 min / vel spike.

Let the dough rest until double its volume and exit through the mouth of the Thermomix, approximately one hour. We pour the dough on the work surface, degas it and give it a ball shape.

We crush it lightly with the palm of the hand and sprinkle it with a little flour. We put it on a baking sheet and we let it rest again until doubled, another hour or so, covered with a cloth.

We preheat the oven to 200ºC. We introduce the tray with the dough in the oven for about 35 minutes, watching so it doesn't burn. Remove the tray from the oven and let the bread cool before tasting it.
